Act/Job Title/Role in the Carnival: Merlin shares the running of a food stall in the Cantina, selling breakfasts (fried eggs, pancakes, bacon and the like) in the morning and hot dogs, hamburgers and whatever else you might want to cook on a giant griddle in the afternoon and evening. Also ice tea and fizzy drinks. It's hard work, but it's fun and he gets to chat to people so he's cool with that.
...he's also denoted himself the Carnival's unofficial Health & Safety Executive, which means the occasional gentle exercising of his magic. Should-be-lethal accidents on the Ferris Wheel will turn out to be merely terrifying, deep-fryer accidents will not actually set the entire Carnival on fire, small children trying to get into Georgie's trailer will suddenly lose interest, etc. Also old-timey PUAs being creepy at girls will suddenly find themselves coming out in crops of gross acne and pickpockets working the crowd may sometimes find their shoelaces tied together.
(He also helped out the revue girls one time when a couple of them were sick, but he's not a big fan of turning into a girl and it will never happen again so let's not talk about it.)

Age: Uhhhhhhh this depends on when historically the show took place, which given its status as a ~delicious parfait of anachronisms~ is hard to pin down and the response of the creators to this is pretty much 'we don't know, let's find a motherfucking dragon and ask him'. Let's say 1300 and change. Looks early-20s-ish.
Canon Point: Around the time of the very end of the show, when Merlin was a frowny ancient hobo padding around Glastonbury Tor (though I'm going with the common fangirl assumption that his physical age is still whateverthefuck he wants it to be, because let's face it, when your physical age should be 'pile of bones and dust' then it's obviously pretty much up to you). Around this point - two months before the start of the game timeline - the Carnival rolled through town and Merlin decided: fiiiine let's get a change of scenery up ins. He trusts ~destiny~ to get him home when he needs to be there.
